Harvested early, cold-extracted and unfiltered. The result is an oil with an analysed high content of olive oil polyphenols, including 476 mg/kg oleocanthal and 295 mg/kg oleacein, with a total polyphenol content of 1,174 mg/kg.
The olives are grown without irrigation in a vibrant ecosystem near Agios Mathios at Mount Gamillios. The olives are crushed shortly after harvest and extracted by cold extraction at low temperature. No refining, no chemical solvents. Only oil from the latest harvest.

The olives are cultivated without artificial fertilisers or pesticides in Corfu, Greece. The product is certified organic under the EU organic farming scheme (DK-ØKO-100) and produced in accordance with EU regulations for organic farming.
